Is there any fast way to take out a specific volume from a group of subjects so as to where I could pull out the caudate and hippocampus volumes for each person to analyze statistically between groups?

Do you just mean the volume in mm^3 of the caudate, etc? These numbers are in the aseg.stats files in each subject. You can create a spread sheet using asegstats2table (including just specifying the segs you want).
