if you want to fill it with white-gaussian noise, you can also use mri_surf2surf, something like
mri_surf2surf --s yoursubject --hemi lh --sval lh.thickness --tval lh.thickness.synth -tfmt curv --synth
if you want more elaborate distributions, you can use mri_volsynth then mri_surf2surf (don't be confused by the "vol" in volsynth)
