You can create a patch by cutting a plane. Select 3 vertices to define the plane, then one more to designate the side of the plane that you want to keep, then cut the "cut plane" button. I would suggest defining the plane on the inflated. You can save the patch from the file menu. Do a search on "patch" on the wiki for more info.
