the easiest thing to do is to read it and write it from matlab. The should remove pretty much everything. We can add something to mri_convert for the future

I'm not sure you need to change the tags at all - as you say they are just provenance info and not used for any analysis. We could put something into mri_convert to strip all the tags if it is deidentification you are concerned about
