did you actually put "<subject name>" on your command-line? <subject name> is supposed to be the name of your subject, eg, "bert" (but without the quotes). What's a "Flug"?
For your second question, there will not be a brain.mgz after the first step, but there will be a brainmask.mgz. Also, please see surfer.nmr.mgh.harvard.edu/fswiki/BugReporting for how to pose questions so that we can answer them better.
