I have a DTI dataset with 10 b0 and gradient 30 directions. I would like to remove one or two volumes from the dataset and then repackage the data. How do I do this? thank you

Not sure if this is the simplest way but mri_convert --split, followed by mri_concat, should do it. You'll also have to remove the respective gradient directions from the gradient file.
