the long.qdec table is just a text file and described, for example, here: https://surfer.nmr.mgh.harvard.edu/fswiki/FsTutorial/LongitudinalTutorial_fr...
The trickiest part for you will be to setup the model and that depends on the analysis you want to do (what co-variates to include, are some time varying, fixed and mixed effects). As that can get more involved we recommend to include a bio-statistician or read up on the statistics.
